ULTIMATE VEGAN CAESAR SALAD DRESSING

My family goes wild over Caesar salad and it has become a tradition at all family gatherings. During my school years I lived with a girl from Iroquois Falls, Ontario who shared her amazing Caesar Salad Dressing with me.   My daughter loves the dressing so much that she eats it by the spoonful!  When I made the transition to vegan I no longer indulged in the salad as the recipe for the dressing calls for an egg and parmesan cheese.  I am so excited I finally created a very similar Caesar Salad Dressing that even my family can’t tell the difference.  I hope you try this out!

Blend aquafaba and garlic clove in mini food processor until very frothy, about 30 seconds.

Add all ingredients except for oil, blend well.  Add oil slowly while blending until dressing becomes thick.

 You should be able to make small peaks with the dressing when lifting the blade.

Description

The name describes this vegan Caesar salad dressing perfectly.  Its so creamy, garlicky and cheesy with just the right amount of fresh lemon juice to give this dressing the two thumbs up in our home.  It’s so quick and easy to throw together and your family and guest will not believe it’s vegan!


Ingredients

Scale
  • 3 tablespoons of aquafaba
  • 1 large garlic clove
  • 1 teaspoon dry mustard
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon nutritional yeast
  • 1 tablespoon vegan Worcestershire sauce (I use Wan Ja Shan brand)
  • ½ juice of fresh lemon
  • approximately ¾ cup of grapeseed oil

Instructions

  1. Blend aquafaba and garlic clove in mini food processor until very frothy, about 30 seconds.
  2. Add all ingredients except for oil, blend well.
  3. Add oil slowly while blending until dressing becomes thick. You should be able to make small peaks with the dressing when lifting the blade.

Notes

Sprinkle more nutritional yeast over the salad for more cheesy favour.  Try this recipe with GARLICKY PORTOBELLO WITH BALSAMIC DRIZZLE,  VEGAN PULLED PORK VEGAN ,  or  YUMMY GRILLED VEGAN HOT DOGS!!!

This salad dressing can also double as a dip for fresh cut vegetables.

Keep Caesar Salad Dressing in air tight glass container.  Should keep for a week.
