I actually became gluten-free a couple of years before starting my journey to a plant-based lifestyle. Having suffered for so many years with bloating and a lack of energy, I had seen several doctors trying to find answers but not getting any.  There were all kinds of blood tests for, among other things, B12 and iron levels with results indicating that everything was fine.  Why then did I feel so unwell?  Every morning I seemed to be dragging myself out of bed only to make it to mid-afternoon craving a nap.  My mind was in fog and it took a lot of energy to focus.  Weekends were spent napping, taking care of the basic household chores and preparing a meal or two. My quality of life was terrible and I was depressed.

Getting absolutely nowhere with the medical profession it was time to look for answers elsewhere.  I began seeing a naturopath and she ran a test that showed I was highly sensitive to gluten and a few other things.  My journey to remove all gluten from my diet began here and let me tell you, it was not easy.  Remember, my background is Italian.  It was slow going, but as I removed more and more foods with gluten I began to feel better.  I had more energy, could think more clearly and was actually able to multi-task without feeling overwhelmed.  My naturopath ordered more blood tests and found my B12 and iron levels were not up to her standards.  I made some adjustments to my diet which resulted in improved levels.

Once I had solved this health issue, I was ready to begin my plant-based journey.  With the help of my naturopath and doctor I was making informed choices about my diet and introducing new sources of fibre.  I was thrilled to discover millet, buckwheat, flax meal, quinoa and many other gluten-free sources of fibre I had no idea about!

If you surround yourself with a good supportive team (medical doctor, naturopath and loving/ understanding family) you can live a very healthy life.  I’m living proof of it. I’m going to be honest … this gluten-free/plant-based journey is not easy, especially at the beginning, but it can be done.  It takes time and patience.  My blog is so important to me because I don’t want anyone to suffer the way I did and not know how to fix it.
